Mushroom Preparation

Season the Mushrooms
In a large mixing bowl, combine the cleaned mushrooms with olive oil, salt, black pepper, and fresh thyme leaves. Toss well to ensure the mushrooms are evenly coated.
- 3
Roast the Mushrooms
Spread the seasoned mushrooms in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are golden and tender, stirring halfway through.
Garlic and Shallot

Prepare Garlic and Shallots
While the mushrooms are roasting, peel the garlic cloves and shallots. Mince the garlic and finely chop the shallots.
- 5
Sauté Garlic and Shallots
In a small pan, heat a tablespoon of olive oil over medium heat. Add the minced garlic and chopped shallots. Sauté until the shallots are translucent and the garlic is fragrant, about 3-4 minutes.
Cheese Topping

Combine Ingredients
Once the mushrooms are roasted, remove them from the oven. In a large mixing bowl, combine the roasted mushrooms, sautéed garlic and shallots, and the three types of cheese. Mix gently until everything is well distributed.

Final Bake
Transfer the mixture to a baking dish. Spread it evenly and top with additional grated Pecorino cheese if desired. Bake in the oven for an additional 10-15 minutes, until the cheese is melted and bubbly.
