Method
Preparing Calamari

Prep the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix the Coating
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

Coat the Calamari
Dredge the dried calamari rings in the flour mixture until fully coated.

Heat the Oil
In a deep fryer or large pot, heat the oil to 375°F (190°C).

Fry the Calamari
Fry the calamari in batches for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Shave the Lemon
Using a vegetable peeler, shave thin strips of lemon peel. Remove the pith to avoid bitterness.
Making Roasted Tomato Aioli

Blend the Aioli
In a food processor, combine mayonnaise, roasted tomatoes, garlic cloves, lemon juice, salt, and black pepper. Blend until smooth.
