Prepare the Pizza Dough
Preheat the oven to 475°F (245°C). Roll out the pizza dough on a floured surface to your desired thickness, usually about 1/4 inch. Transfer the rolled dough to a pizza stone or baking sheet lined with parchment paper.

Make the Tomato Sauce
In a saucepan, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Stir in crushed tomatoes, dried oregano, salt, black pepper, and sugar. Simmer for 15-20 minutes until thickened. Remove from heat and let cool slightly.

Assemble the Pizza
Spread the prepared tomato sauce evenly over the pizza dough, leaving a small border around the edges. Lay the slices of fresh mozzarella evenly on top of the sauce. Sprinkle grated pecorino cheese over the mozzarella.

Add Fresh Basil
Scatter the torn basil leaves over the top of the pizza. If using, add cup n char pepperoni or housemade Italian sausage at this stage.

Bake the Pizza
Drizzle the remaining tablespoon of olive oil over the pizza. Place the pizza in the preheated oven and bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.

Serve
Remove the pizza from the oven and let it cool for a couple of minutes. Slice and serve hot, garnished with additional fresh basil leaves if desired.
