Deglaze with Wine
Pour in the red wine and let it simmer until mostly evaporated.

Add Tomatoes and Seasonings
Add the crushed tomatoes, salt, black pepper, oregano, and torn basil. Stir well and let the sauce simmer on low heat for at least 30 minutes, stirring occasionally.

Add Milk
Gradually whisk in the milk, ensuring there are no lumps. Continue whisking until the sauce thickens, about 5-7 minutes.

Season the Sauce
Add nutmeg and salt to the bechamel sauce, mixing well. Remove from heat and set aside.
Lasagna Assembly

Preheat Oven
Preheat your oven to 180°C (350°F).

Layer the Ingredients
In a baking dish, spread a thin layer of Bolognese sauce on the bottom. Layer 3 lasagna sheets, then add a portion of the Bolognese sauce, followed by a layer of ricotta, a little bechamel, and mozzarella. Repeat the layers until all ingredients are used, finishing with bechamel and a sprinkle of Grana Padano and Pecorino on top.

Bake the Lasagna
Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until golden and bubbly.

Garnish and Serve
Let the lasagna rest for about 10 minutes before slicing. Garnish with torn basil leaves before serving.
