For the Housemade Italian Sausage

    Prepare the Sausage

    In a mixing bowl, combine ground pork, fennel seeds, paprika, garlic powder, salt, black pepper, crushed red pepper flakes, and chopped parsley. Mix well until all ingredients are incorporated.

    Cook the Sausage

    In a skillet over medium heat, cook the sausage mixture until browned and fully cooked, about 10-12 minutes. Break it up into small pieces as it cooks. Remove from heat and set aside.

For the Hash

    Cook the Potatoes

    In a large skillet, heat olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook until crispy and golden brown, about 15-20 minutes, stirring occasionally.

    Add the Vegetables

    Once the potatoes are almost cooked, add the diced red and green bell peppers and sliced chianti onions. Cook for an additional 5-7 minutes until the vegetables are tender.

    Combine with Sausage

    Add the cooked Italian sausage to the skillet with the potatoes and vegetables. Stir well to combine and heat through for another 2-3 minutes.

    Cook the Eggs

    In a separate pan, cook the eggs sunny-side up or to your desired doneness. Season with salt and pepper.

For the Hollandaise Sauce

    Prepare the Hollandaise

    In a heatproof bowl, whisk together egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler). Gradually whisk in melted butter until the sauce thickens. Season with salt and cayenne pepper.

To Assemble

    Plate the Dish

    Spoon the sausage hash onto plates, top with sunny-side up eggs, drizzle with hollandaise sauce, and garnish with chopped parsley.
