Cheese Preparation

    Combine Cheeses

    In a large mixing bowl, combine the shredded mozzarella, shredded fontina, and cubed taleggio. Mix well so that the cheeses are evenly distributed.

    Add Pecorino

    Gently fold in the grated pecorino cheese into the mixed cheese blend until fully incorporated.

Fried Sage Preparation

    Heat Oil

    In a small saucepan, heat 1/4 cup of olive oil over medium heat until shimmering.

    Fry Sage

    Add the fresh sage leaves to the hot oil and fry until they are crispy and fragrant, about 1-2 minutes. Remove the fried sage from the oil and drain on paper towels. Set aside.

Pasta Preparation

    Cook Pasta

    In a large pot, bring salted water (add 1 tsp of salt) to a boil. Add the pasta of your choice and cook according to package instructions until al dente. Drain the pasta, reserving 1/2 cup of pasta cooking water.

    Combine with Cheese

    In the same pot or a large mixing bowl, combine the drained pasta with the cheese mixture. If necessary, add a little reserved pasta cooking water to help melt the cheeses and create a creamy sauce.

    Finish with Sage

    Gently fold in the crispy fried sage leaves into the pasta and cheese mixture, ensuring they are evenly distributed.
