Preparation of Crispy Smashed Rosemary Potatoes

    Boil the Potatoes

    In a pot, bring salted water to a boil. Add the small potatoes and cook until tender, about 15-20 minutes.

    Smash the Potatoes

    Drain the potatoes and let them cool slightly. Preheat the oven to 220°C (425°F). On a baking sheet, place the potatoes and gently smash each one with the bottom of a cup.

    Season and Bake

    Drizzle olive oil over the smashed potatoes, sprinkle with fresh rosemary, salt, and black pepper. Bake in the preheated oven for 25-30 minutes until golden and crispy.

Preparation of Fonduta

    Melt the Cheeses

    In a saucepan over low heat, combine the Taleggio and Fontina cheese with heavy cream. Stir gently until the cheeses are melted and the mixture is smooth.

    Season the Fonduta

    Add a pinch of nutmeg to the melted cheese mixture and stir well. Keep warm while you prepare the rest of the dish.

Preparation of Rustic Toast

    Toast the Bread

    Brush each slice of sourdough bread with olive oil and rub with the garlic clove. Toast in a skillet over medium heat until golden brown on both sides.

    Layer the Ingredients

    Place a slice of cotto ham on each piece of toasted bread, then spoon the warm fonduta over the ham.

Cooking the Eggs

    Fry the Eggs

    In a separate skillet, heat a little olive oil over medium heat. Crack the eggs into the skillet and cook them sunny-side up until the whites are set but the yolks are still runny. Season with salt and pepper to taste.

Assembly

    Plate the Croque Nonna

    On each plate, place a slice of the toasted rustic bread with ham and fonduta. Top each with a sunny-side up egg and serve alongside the crispy smashed rosemary potatoes.
