Roasted Tomato Aioli

Arugula Salad

Housemade Focaccia

Method

Chicken Milanese

  1. 1

    Prepare the Chicken

Pound chicken breasts to an even thickness of about 1/2 inch. This ensures even cooking.

  2. 2

    Set Up Breading Station

In one bowl, place the flour mixed with salt and pepper. In a second bowl, beat the eggs. In a third bowl, combine breadcrumbs and grated Grana Padano cheese.

  3. 3

    Bread the Chicken

Dredge each chicken breast in flour, shaking off excess, then dip in beaten eggs, and finally coat in the breadcrumb mixture, pressing lightly to adhere.

  4. 4

    Fry the Chicken

In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken and cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Roasted Tomato Aioli

  1. 5

    Roast the Tomatoes

Preheat the oven to 400°F (200°C). Place cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until soft and slightly caramelized.

  2. 6

    Blend Aioli Ingredients

In a food processor, combine roasted tomatoes, mayonnaise, minced garlic, lemon juice, and olive oil. Blend until smooth. Adjust seasoning with salt and pepper to taste.

Arugula Salad

  1. 7

    Prepare the Salad

In a bowl, combine arugula with olive oil, lemon juice, salt, and pepper. Toss gently until arugula is evenly coated.

Housemade Focaccia

  1. 8

    Prepare the Dough

In a bowl, mix warm water and yeast. Let it sit for about 5 minutes until frothy. In another bowl, combine flour and salt. Gradually add the yeast mixture and olive oil, mixing until a dough forms.

  2. 9

    Knead and Rise

Knead the dough on a floured surface for about 10 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

  3. 10

    Shape and Bake

Preheat the oven to 425°F (220°C). Punch down the dough and spread it onto a greased baking sheet. Dimple the surface with your fingers. Drizzle with olive oil and sprinkle with salt and optional rosemary. Bake for 20-25 minutes or until golden.
