Chicken Milanese

Prepare the Chicken
Pound chicken breasts to an even thickness of about 1/2 inch. This ensures even cooking.

Bread the Chicken
Dredge each chicken breast in flour, shaking off excess, then dip in beaten eggs, and finally coat in the breadcrumb mixture, pressing lightly to adhere.

Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken and cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Roasted Tomato Aioli

Roast the Tomatoes
Preheat the oven to 400°F (200°C). Place cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until soft and slightly caramelized.

Blend Aioli Ingredients
In a food processor, combine roasted tomatoes, mayonnaise, minced garlic, lemon juice, and olive oil. Blend until smooth. Adjust seasoning with salt and pepper to taste.

Knead and Rise
Knead the dough on a floured surface for about 10 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape and Bake
Preheat the oven to 425°F (220°C). Punch down the dough and spread it onto a greased baking sheet. Dimple the surface with your fingers. Drizzle with olive oil and sprinkle with salt and optional rosemary. Bake for 20-25 minutes or until golden.
