Prepare the Burger Patty

    Form the Patties

    In a large bowl, gently mix the American Wagyu beef with salt and black pepper. Divide the mixture into two equal portions and shape them into patties, about ¾ inch thick.

    Chill the Patties

    Cover the patties with plastic wrap and refrigerate for at least 30 minutes to help them hold their shape while cooking.

    Cook the Bacon

    In a skillet over medium heat, cook the applewood bacon slices until crispy, about 5-7 minutes. Remove from the skillet and let them drain on paper towels.

Cook the Patties

    Grill the Patties

    Heat a grill or skillet over medium-high heat. Cook the burger patties for 4-5 minutes on one side until browned. Flip the patties and place a slice of American cheese on each patty. Cook for an additional 3-4 minutes for medium-rare or until desired doneness.

Assemble the Burger

    Prepare the Buns

    While the patties are cooking, slice the brioche buns in half and lightly toast them on the grill or in a toaster until golden.

    Add the Toppings

    Spread mayonnaise on the bottom half of each toasted brioche bun. Layer with lettuce, the cooked hamburger patty with melted cheese, crispy bacon, and slices of red onion. Top with the other half of the bun.
