Method

Starter: Tomato Basil Bruschetta

    Prepare the Tomatoes

    Dice the Roma tomatoes and place them in a bowl.

    Add Seasoning

    Chop the fresh basil leaves and mince the garlic. Add to the bowl with tomatoes. Drizzle with olive oil, and season with salt and black pepper. Mix well.

    Toast the Baguette

    Slice the baguette into 1/2 inch pieces. Toast them in the oven at 400°F (200°C) for about 5-7 minutes until golden brown.

    Assemble Bruschetta

    Top each toasted baguette slice with the tomato mixture. Serve immediately.

Main Course: Herb-Crusted Chicken

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Herb Mixture

    In a bowl, combine bread crumbs, grated Parmesan cheese, chopped parsley, chopped thyme, salt, and black pepper.

    Coat the Chicken

    Brush the chicken breasts with olive oil and then coat them evenly with the herb mixture.

    Bake the Chicken

    Place the coated chicken breasts on a baking sheet and bake for 25-30 minutes, or until cooked through and golden brown.

Dessert: Chocolate Mousse

    Melt Chocolate

    In a heatproof bowl, melt the dark chocolate and butter together over a pot of simmering water, stirring until smooth.

    Whip Egg Yolks

    In a separate bowl, whisk the egg yolks with sugar until pale and creamy.

    Combine Mixtures

    Slowly pour the melted chocolate mixture into the egg yolk mixture, stirring constantly to combine.

    Whip Egg Whites

    In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.

    Fold in Egg Whites

    Gently fold the whipped egg whites into the chocolate mixture until just combined.

    Whip Cream

    In a separate bowl, whip the cream until soft peaks form. Then fold it gently into the chocolate mixture.

    Chill and Serve

    Transfer the mousse into serving dishes and refrigerate for at least 2 hours before serving.
