Cooking Pasta

    Boil Water

    Fill a large pot with water and bring it to a boil. Once boiling, add 1 tablespoon of salt.

    Cook Spaghetti

    Add 400 grams of spaghetti to the boiling water. Cook according to package instructions until al dente, typically about 8-10 minutes.

    Reserve Pasta Water

    Before draining, reserve about 1 cup of the pasta cooking water. Then drain the spaghetti and set aside.

Preparing Sauce

    Cook Pancetta

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 150 grams of diced pancetta and cook until crispy, about 5-7 minutes.

    Mix Eggs and Cheese

    While the pancetta is cooking, whisk together 4 large eggs and 100 grams of grated Parmesan cheese in a bowl until well combined. Add 1 teaspoon of black pepper.

Combining Everything

    Combine Pasta and Pancetta

    Once the pancetta is crispy, add the drained spaghetti to the skillet and toss to combine. Remove from heat.

    Add Egg Mixture

    Quickly pour the egg and cheese mixture over the hot pasta, tossing vigorously. The heat from the pasta will cook the eggs gently, creating a creamy sauce.

    Adjust Consistency

    If the sauce is too thick, add a little reserved pasta water until desired creaminess is achieved.

    Serve

    Serve immediately, garnished with extra Parmesan cheese and freshly cracked black pepper if desired.
