Method
Cooking the Pasta

Bring a large pot of salted water to a boil.

Add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Once cooked, drain the pasta and set aside, reserving about 1/2 cup of the pasta water.
Preparing the Vegetables

Wash and chop the bell peppers, zucchini, carrots, and broccoli into bite-sized pieces.

Halve the cherry tomatoes.
Making the Sauce

In a large skillet, heat the olive oil over medium heat.

Add the minced garlic and sauté for about 1 minute until fragrant, but not browned.

Add all the chopped vegetables to the skillet and sauté for about 5-7 minutes until tender.

Season with salt and black pepper.
Combining Everything

Add the drained pasta to the skillet with the sautéed vegetables.

Toss everything together, adding reserved pasta water as needed to help combine.
