Chicken Preparation

Marinate the Chicken
In a large bowl, combine the buttermilk with 1 tsp of salt and 1 tsp of black pepper. Add the chicken breasts and coat them well. Cover the bowl and refrigerate for at least 1 hour, or overnight for best results.

Prepare the Coating
In a separate bowl, mix together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper. This will be the coating for the chicken.

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles, it’s ready.

Fry the Chicken
Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring they are fully coated. Carefully place the coated chicken into the hot oil. Fry for about 5-7 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Mix the Spicy Mayo
In a small bowl, combine the mayonnaise, hot sauce, and lemon juice. Stir until well mixed and set aside.

Assemble the Sandwich
Spread a generous amount of spicy mayo on the bottom half of each burger bun. Place a piece of fried chicken on top, followed by pickles and a lettuce leaf. Top with the other half of the bun and serve immediately.
