Prepare lettuce

Rinse the iceberg head under cold water, pat dry thoroughly with paper towels. Slice into 4 equal wedges through the core so each wedge holds together.

Cook bacon

Place bacon slices in a cold skillet and cook over medium heat, turning occasionally, until crisp (about 8–10 minutes). Transfer to a paper towel–lined plate to drain and cool, then crumble or chop into bite-sized pieces.

Prepare vegetables

Thinly slice the red onion into half-moons (about 2–3 mm). Cut the cucumber into 1/4-inch half-moons (discard seeds if watery) or small dice. Dice the roma tomato into 1/2-inch pieces and remove excess juices. Keep each component separate on a plate until assembly.

Combine base

In a medium bowl, crumble the smoked blue cheese and add the Greek yogurt and mayonnaise. Use a fork to mash and combine until mostly smooth with some small blue cheese chunks remaining for texture.

Add flavor & berries

Stir in the mixed berry preserves, buttermilk, lemon juice, Dijon mustard and honey until well combined. The preserves provide sweetness and berry character that balances the smoky blue cheese.

Season & adjust

Season with salt and freshly ground black pepper. If the dressing is too thick, add up to 1–2 tablespoons more buttermilk to reach a pourable consistency suitable for drizzling over wedges. Taste and adjust salt, honey, or lemon to balance sweet, tangy, and savory notes. Chill for at least 10 minutes to let flavors meld.

Assembly & finishing

Arrange one iceberg wedge on each chilled plate. Scatter a portion of crumbled bacon evenly over each wedge (about 1.5 slices worth per wedge). Distribute cucumber slices, red onion half-moons and diced tomato across the top of each wedge so each bite has a mix of components.

Generously drizzle the smoked blue cheese berry dressing over each wedge (about 2–3 tablespoons per wedge), or serve additional dressing on the side. Sprinkle chopped chives or parsley over the top for color, and add a final crack of black pepper if desired.

Serve immediately so the lettuce stays crisp.
