Sriracha aioli
Make the sauce first
In a medium bowl combine 1 cup mayonnaise, 2 tablespoons Sriracha, 1 tablespoon fresh lime juice, 1 teaspoon minced garlic, and 1 teaspoon honey (optional). Whisk until smooth and homogenous. Season with 1/4 teaspoon kosher salt and 1/8 teaspoon freshly ground black pepper; taste and adjust: add more Sriracha for heat, more honey for sweetness, or extra lime for brightness. Cover and refrigerate while you prepare the plantains so flavors meld (at least 10 minutes).

Prepare plantains
Select 3 ripe plantains (skin yellow with black spots for sweet flavor). Cut off the stem ends. Using a knife, slice down the curve to peel away the skin. Cut each plantain on the diagonal into 1/2-inch to 3/4-inch thick slices — diagonal slices give a larger surface and crisp edge.
Heat oil
Pour about 2 cups neutral oil into a deep heavy skillet or medium saucepan (oil should be 1/2–1 inch deep). Heat over medium-high until the oil reaches 350°F (175°C) or a small piece of plantain sizzles and browns in about 30–45 seconds. If you don't have a thermometer, test carefully with one piece.
Fry plantains
Working in a single layer (do not overcrowd), carefully add slices to the hot oil using tongs or a slotted spoon. Fry for 1.5–2.5 minutes per side, until golden brown and caramelized — flip once halfway through. Total fry time per batch ~3–5 minutes depending on thickness and ripeness. Remove to a paper towel–lined tray to drain. Lightly sprinkle each batch with fine salt (approximately 1/4 teaspoon per batch) while hot. Repeat with remaining plantains. Maintain oil temperature between 330–360°F (165–180°C); reduce heat slightly if browning too quickly.
Optional second fry for extra crispness
If you prefer extra-crispy edges, after the first fry and resting for 2–3 minutes, return the plantains to hot oil (350°F/175°C) for a quick 30–45 seconds to crisp the exterior. Drain on paper towels again and salt lightly.
Finish & serve
Arrange fried plantains on a serving platter. Drizzle sriracha aioli over the top in a thin stream (use a spoon to control drizzle) or serve the aioli on the side for dipping. Sprinkle chopped cilantro (about 2 tablespoons) over the plantains and serve with lime wedges. Squeeze lime over plantains just before eating for brightness.
