House Salad Recipe

Salad greens & base
Prepare greens
Place 6 cups of spring mix in a large salad bowl. Gently fluff and remove any wilted leaves.
Shred carrots
Peel 1 cup worth of carrots (about 1–2 medium carrots). Use a box grater or peeler to julienne or grate the carrots into thin strips. Add to the bowl.
Vegetable toppings
Dice tomatoes
Core and dice tomatoes until you have about 1 cup. Pat lightly with paper towel if very juicy, then distribute evenly over the salad.
Add banana peppers
Drain and slice pickled banana peppers if not pre-sliced. Add approximately 1/2 cup to the salad, distributing for even flavor.
Finishing & optional
Season and dress
Drizzle 2 tablespoons extra-virgin olive oil and 1 tablespoon fresh lemon juice evenly over the salad. Sprinkle 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper. Toss gently with salad tongs to coat ingredients evenly.
Add optional toppings
If using, sprinkle 1 cup croutons and 2 tablespoons grated Parmesan or crumbled feta on top.
Serve
Transfer to individual plates or serve family-style. Offer additional dressing, salt, pepper, or lemon on the side. Serve immediately so greens remain crisp.
