Method
Crab Cakes
Prepare crab meat
Inspect the lump crab meat and pick through to remove any shells or cartilage. Place crab meat in a large mixing bowl and gently break up any large lumps while keeping most pieces intact for texture.
Mix binding ingredients
In a separate bowl, whisk together 1/2 cup mayonnaise, the egg, 1 tablespoon Dijon mustard, lemon zest, lemon juice, chopped parsley, sliced green onions, old bay seasoning, smoked paprika, garlic powder, kosher salt, and black pepper until smooth.
Combine with crab
Add the wet mixture to the crab meat and gently fold to combine. Add 3 cups panko breadcrumbs and fold just until mixture holds together. Avoid overmixing — the mixture should be moist but able to form cakes. If too wet, add up to 1/4 cup additional panko.
Form cakes
Divide mixture into 8 equal portions (about 2 oz each for appetizer size or 4 for larger cakes). Lightly wet your hands and form each portion into a compact patty about 2.5–3 inches wide and 3/4 inch thick. Place cakes on a tray and refrigerate, uncovered or lightly covered, for at least 30 minutes to firm up (this helps them hold shape when frying).
Coat and pan-fry
Pour the additional cup of panko into a shallow dish. Lightly press each chilled crab cake into the panko to coat the exterior. Heat a large skillet over medium heat and add 2 tablespoons neutral oil and 2 tablespoons unsalted butter. When butter foams and sizzles but before it browns, add crab cakes (do not overcrowd; fry in batches). Cook 3–4 minutes per side until golden brown and crisp, gently pressing once with a spatula to ensure even contact. Internal temperature should reach 145°F (63°C) and centers should be hot. Transfer cooked cakes to a wire rack or paper towel–lined plate to drain briefly; keep warm in a low oven if needed.
Datil Remoulade
In a small bowl, combine 1/2 cup mayonnaise, 1 teaspoon Creole or Dijon mustard, 1 teaspoon datil pepper hot sauce (or 1 tsp minced datil pepper), 1 tablespoon lemon juice, chopped capers, paprika, minced garlic, salt, black pepper, and chopped parsley. Whisk until smooth and taste; adjust heat with additional hot sauce or salt as desired.
Cover and refrigerate the remoulade for at least 15 minutes to allow flavors to meld. Bring to cool room temperature before serving alongside the crab cakes.
Plating & Final Notes
For consistency with a house-style presentation: place 2–3 crab cakes per serving (depending on appetizer vs entree), spoon 1–2 tablespoons datil remoulade per plate, add a lemon wedge and a small sprinkle of paprika over the remoulade for color. If making ahead, form and refrigerate crab cakes up to 24 hours; fry just before service to retain crispness.
