Tortilla & Cheese Layer

Preheat and crisp chips (optional)

Preheat oven to 375°F (190°C). If your tortilla chips are not crispy or you prefer extra crunch, toss the chips lightly with 2 tbs vegetable oil and 1/2 tsp coarse salt. Spread in a single layer on a baking sheet and bake 5–7 minutes until golden and crisp. Remove and let cool.

On a large oven-safe platter or rimmed baking sheet, arrange half of the chips in an even layer. Sprinkle half of the shredded Monterey Jack over the chips. Add remaining chips on top, then finish with the remaining cheese in an even layer.

Place the assembled chips and cheese under a preheated broiler (or in a 400°F / 200°C oven) for 2–4 minutes, watching closely, until the cheese is fully melted and bubbling. Remove from oven and set aside.

Protein (choose one option)

Grilled Chicken

If using chicken breast: butterfly or pound to even thickness (~1/2 inch). Season both sides with 1/2 tsp salt, 1/4 tsp black pepper and 1 tsp olive oil. Grill over medium-high heat (or use a stovetop grill pan) 4–6 minutes per side until internal temperature reaches 165°F (74°C). Let rest 5 minutes, then slice into thin strips. Scatter evenly over the melted-cheese chips.

Blackened Chicken or Fish

Pat protein dry and rub with 1 tbs blackening seasoning and 1 tsp olive oil. For chicken: cook in a hot skillet 4–6 minutes per side until cooked through; for white fish fillets: sear 2–3 minutes per side until opaque and flaky. Flake fish with a fork or slice chicken and distribute over the nachos.

BBQ Pulled Pork

If using pre-cooked BBQ pulled pork, warm gently in a small saucepan over low heat until just warmed through (about 4–6 minutes) or in the microwave for 1–2 minutes. Scatter warmed pulled pork evenly across the cheese layer.

Pineapple Pico de Gallo

Combine 1 cup diced pineapple, 1 cup diced tomato, 1/4 cup red onion, 1 tsp minced jalapeño, 2 tbs chopped cilantro, 2 tbs lime juice and 1/4 tsp salt in a bowl. Taste and adjust lime or salt as desired. Let sit 5–10 minutes to marry flavors, then spoon generous portions over the warm nachos.

Baja Drizzle (signature sauce)

Whisk together 1/2 cup mayo, 1/4 cup sour cream, 1 tsp minced chipotle, 1 tbs lime juice, 1 tsp honey, 1/2 tsp smoked paprika and 1/4 tsp salt until smooth. Transfer to a small squeeze bottle or spoon. Drizzle in thin streams over the nachos just before serving. Taste and adjust for more heat or acidity if desired.

Fresh Finish & Assembly

Top the sauced nachos with 2 cups shredded lettuce, 2 tbs sliced green onion, 2 tbs cilantro leaves and 1/4 cup pickled red onions if using. Serve immediately with lime wedges on the side for squeezing over the finished nachos.

Serve: Present nachos on the platter or divide between 4 plates. Encourage diners to grab a mix of chips, protein, pineapple pico, and drizzle for balanced bites.
