Prepare the Vegetables
Peel and chop rutabaga and carrots into uniform pieces for even roasting.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Season the Vegetables
In a large mixing bowl, combine the chopped rutabaga and carrots. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.

Roast the Vegetables
Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until tender and golden brown, stirring halfway through.

Prepare the Garlic Cream
In a small saucepan, combine 1/2 cup heavy cream, 2 minced garlic cloves, and a pinch of salt. Heat over low heat until warm, then blend until smooth.

Serve with Apples and Cranberries
Once the vegetables are roasted, remove from oven. Toss with chopped Granny Smith apples and cranberries. Drizzle with garlic cream before serving.
