Preparation

Poached Apples

1. Prepare the Poaching Liquid

In a large pot, combine the water, brown sugar, cinnamon sticks, cloves, star anise, and vanilla extract. Bring to a simmer over medium heat until the sugar has dissolved.

2. Poach the Apples

Core the Minnesota apples and slice them in half. Add them to the pot and simmer for about 15-20 minutes or until tender. Remove from the heat and let cool in the liquid.

Mulling Spiced Donut

3. Prepare the Donut Batter

In a bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, mix the milk, eggs, and melted butter.

4. Combine and Fry

Mix the wet ingredients into the dry until just combined. Heat the vegetable oil in a deep pan. Drop spoonfuls of batter into the hot oil and fry until golden brown, about 3-4 minutes per side. Drain on paper towels.

Hazelnut Preparation

5. Roast the Hazelnuts

In a skillet, toast the hazelnuts over medium heat until fragrant and lightly browned, about 5-7 minutes. Add sugar and salt, stirring to coat. Let cool.

Sunchoke Ice Cream

6. Prepare Sunchoke Base

Boil the sunchokes in water until tender, about 15 minutes. Drain and blend with heavy cream, milk, sugar, vanilla, and salt until smooth.

7. Chill and Churn

Mix in the egg yolks and chill the mixture. Pour into an ice cream maker and churn according to manufacturer's instructions. Freeze until firm.
