Bone Marrow with Whitefish Glaze, Delicata Squash, Cauliflower Giardiniera, and Toasted Baguette

Preparation Steps

Prepare the Cauliflower Giardiniera
In a pot, combine chopped cauliflower, sliced carrots, and diced red bell pepper. Add white wine vinegar, 1 tablespoon of olive oil, salt, black pepper, and dried oregano. Bring to a simmer and cook for about 10 minutes until vegetables are slightly tender. Remove from heat and let cool.

Roast the Delicata Squash
Preheat the oven to 400°F (200°C). Slice the delicata squash in half lengthwise, remove seeds, and cut into half-moon shapes. Toss with 1 tablespoon of olive oil, salt, and black pepper. Spread on a baking sheet and roast for about 20 minutes until golden and tender.

Prepare the Whitefish Glaze
In a small saucepan, melt butter over medium heat. Add the chopped whitefish and cook until opaque, about 5-7 minutes. Remove from heat and set aside.

Prepare the Bone Marrow
Preheat the oven to 450°F (230°C). Place bone marrow pieces cut side up on a baking sheet. Roast for about 15-20 minutes until the marrow is bubbling and browned.

Assemble the Dish
Place roasted bone marrow on a serving platter. Drizzle with whitefish glaze. Serve with roasted delicata squash, cauliflower giardiniera, and toasted baguette on the side.
