    Add the diced carrots, celery, and potatoes to the pot. Cook for about 5-7 minutes, stirring occasionally, until the vegetables start to soften.

    Combine Ingredients

    Pour in the vegetable broth and add the diced tomatoes, bay leaves, dried thyme, salt, and black pepper. Bring the mixture to a boil.
