Preheat the Oven
Preheat your oven to 400°F (200°C) to prepare for roasting the garlic.

Prepare the Garlic
Peel the garlic cloves and slice off the tops. Place them on a piece of aluminum foil, drizzle with 1 tablespoon of olive oil, and sprinkle with a pinch of salt. Wrap the foil tightly to form a packet.

Roast the Garlic
Place the garlic packet in the oven and roast for about 30-35 minutes, until the cloves are soft and caramelized. Remove from oven and let cool.

Cook the Sausage
In a skillet over medium heat, add the Italian sausage. Cook for about 8-10 minutes, breaking it into smaller pieces with a spatula until browned and cooked through. Season with salt and black pepper.

Combine Ingredients
Once the garlic has cooled, squeeze the roasted cloves out of their skins and mash them with a fork. Mix the roasted garlic into the cooked sausage until well combined.

Serve with Toppings
Transfer the sausage and garlic mixture to a serving dish. Top with shaved Parmesan cheese, sprinkle red pepper flakes over the top, and garnish with fresh parsley if desired.
