Method

Prepare the Fish

    Marinate the Fish

    In a bowl, combine olive oil, lime juice, cumin, chili powder, salt, and black pepper. Add the fish fillets to the marinade and coat well. Let it marinate for at least 20 minutes.

    Grill the Fish

    Preheat the grill to medium-high heat. Place the marinated fish on the grill and cook for about 3-4 minutes per side, or until the fish is cooked through and flaky. Remove from the grill and let it rest.

Prepare the Cabbage Slaw

    Mix the Slaw

    In a large bowl, combine the shredded cabbage, grated carrot, chopped cilantro, lime juice, and salt. Toss well to combine and let it sit for about 10 minutes to allow the flavors to meld.

Make the Chipotle Mayo

    Combine Ingredients

    In a small bowl, mix together mayonnaise, minced chipotle peppers, lime juice, and garlic powder until smooth. Adjust seasoning to taste.

Assemble the Tacos

    Warm the Tortillas

    Heat the corn tortillas on a dry skillet over medium heat for about 30 seconds on each side until soft and pliable.

    Build the Tacos

    Place a piece of grilled fish on each tortilla. Top with a generous amount of cabbage slaw and drizzle with chipotle mayo. Serve immediately.
