Caramelize the Onions
In a large skillet, heat the olive oil over medium heat. Add the chopped Vidalia onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until the onions are soft and golden brown.

Mix the Dip Ingredients
In a mixing bowl, combine the cream cheese, Swiss cheese, Parmesan cheese, hot sauce, black pepper, and garlic powder. Stir until well mixed.

Combine with Onions
Once the onions are caramelized, let them cool for a few minutes, then fold them into the cheese mixture until evenly distributed.

Bake the Dip
Preheat the oven to 350°F (175°C). Transfer the dip mixture into a baking dish and smooth the top. Bake for 20-25 minutes until bubbly and lightly golden on top.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Chips
Carefully add the potato slices in batches to the hot oil. Fry for about 3-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

While the chips are still warm, sprinkle them with salt to taste. Repeat the frying process until all potato slices are cooked.
