Method
Chicken Preparation
- 1
Season the Chicken
Sprinkle salt, black pepper, and garlic powder evenly on both sides of the chicken breasts.
- 2
Cook the Chicken
Heat olive oil in a skillet over medium heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). If making buffalo chicken, brush buffalo sauce over the chicken during the last 2 minutes of cooking.
- 3
Rest the Chicken
Remove the chicken from the skillet and let it rest for 5 minutes before slicing.
Sandwich Assembly
- 4
Prepare the Vegetables
Wash and dry the lettuce. Slice the tomato into thin rounds.
- 5
Assemble the Sandwich
Slice the bulky rolls in half. Spread mayonnaise on the bottom half (if using). Place the cooked chicken on the roll, followed by a layer of lettuce and several slices of tomato. Top with the other half of the roll.
- 6
Serve
Serve the chicken sandwich immediately while warm, with additional buffalo sauce on the side if desired.
