Prepare Burger Patty

Mix Ingredients
In a large bowl, combine cooked quinoa, black beans, rolled oats, diced bell pepper, chopped onion, minced garlic, cumin, paprika, salt, and black pepper. Mash the mixture with a fork or potato masher until well combined yet still slightly chunky.

Form Patties
Divide the mixture into 4 equal parts and form each part into a patty shape, about 1 inch thick.

Prepare Avocado
Slice the avocados in half, remove the pit, and carefully slice the flesh into thin slices. Set aside.

Make Poblano Ranch
In a small bowl, mix the ranch dressing with the diced roasted poblano pepper and chopped cilantro until well combined.

Prepare Pico de Gallo
If not using store-bought pico de gallo, combine diced tomatoes, onions, jalapeños, lime juice, and cilantro in a bowl and mix well.
Assemble Burger

Build the Burger
On each burger bun, place a cooked veggie patty, top with a slice of Swiss cheese, a few slices of avocado, a generous spoonful of pico de gallo, and drizzle with poblano ranch dressing. Top with the other half of the bun.
