Cooking Pasta

Boil Water

In a large pot, bring water to a rolling boil. Add 1 tsp of salt.

Cook Pasta

Add 2 cups of elbow macaroni to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

Drain and Rinse

Once cooked, drain the pasta and rinse under cold water to stop cooking. Set aside.

Making Cheese Sauce

Melt Butter

In a saucepan over medium heat, melt 2 tablespoons of butter.

Create Roux

Add 2 tablespoons of all-purpose flour to the melted butter, whisking continuously for about 1-2 minutes until it forms a paste.

Add Milk

Gradually whisk in 2 cups of milk, ensuring there are no lumps. Continue to cook until the mixture thickens, about 3-5 minutes.

Add Cheese

Reduce heat to low and add 2 cups of shredded cheddar cheese and 1 cup of softened cream cheese. Stir until fully melted and combined.

Stir in 1 tsp of mustard powder, 1 tsp of paprika, 0.5 tsp of salt, and 0.25 tsp of black pepper. Mix well.

Combining and Serving

Combine Pasta and Sauce

In a large mixing bowl, combine the drained pasta and the cheese sauce. Mix thoroughly until the pasta is evenly coated.

Choose your desired toppings from the list and sprinkle them over the mac and cheese. Options include bacon bits, chopped green onions, sliced jalapeños, bread crumbs, grated parmesan cheese, and diced tomatoes.

For a baked version, transfer the mixture to a greased baking dish, top with additional cheese and bread crumbs, and bake at 350°F (175°C) for 20-25 minutes until golden and bubbly.
