    Prepare the aioli

    In a mixing bowl, combine 1/2 cup mayonnaise, 1 tsp vadouvan spice blend, and a squeeze of lemon juice. Mix well and set aside.

    Prepare the batter

    In a large bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, and cold sparkling water until smooth. The batter should be light and airy.

    Prepare the mushrooms

    Clean the mixed mushrooms with a damp cloth. Cut any large mushrooms into bite-sized pieces, leaving smaller mushrooms whole.

    Heat the oil

    In a deep pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the mushrooms

    Dip the mushrooms into the batter, allowing excess to drip off, then carefully place them into the hot oil. Fry in batches until golden brown and crispy, about 3-4 minutes.

    Drain and garnish

    Using a slotted spoon, transfer the fried mushrooms to a paper towel-lined plate to drain excess oil. Sprinkle with chopped chives and serve with lemon wedges on the side.
