    Prepare strawberries

    Wash the strawberries gently under cold running water. Pat thoroughly dry with paper towels or a clean kitchen towel. Hull the strawberries by removing the green tops and any leaves, then slice them into halves or quarters depending on size so pieces are roughly uniform (about 1/2–3/4 inch pieces). Place the sliced strawberries in a medium mixing bowl.

    Add sugar and aromatics

    Sprinkle the 2 tablespoons of granulated sugar evenly over the strawberries. Add the 1 teaspoon fresh lemon juice and 1 teaspoon vanilla extract. If using the optional liqueur, add 1 teaspoon now. Add a small pinch of coarse sea salt to brighten flavors.

    Toss and rest

    Using a rubber spatula or wooden spoon, gently toss the strawberries with the sugar and aromatics so the fruit is evenly coated. Cover the bowl loosely with plastic wrap or a plate and let the strawberries sit at room temperature for at least 20 minutes. For more syrup and deeper maceration, refrigerate and rest for 1 to 2 hours (up to 6 hours). During resting, the sugar will draw juices from the berries creating a glossy syrup.

    Final adjustment

    After maceration, taste the berries. If they need more brightness, add an additional 1/2 teaspoon lemon juice. If more sweetness is desired, stir in up to 1 additional teaspoon of sugar. Gently fold to combine. If the mixture is too cold or thick from refrigeration, allow it to sit 5–10 minutes at room temperature before serving to let flavors open.

    Serve and garnish

    Spoon the macerated strawberries and their syrup into bowls or onto desserts (ice cream, shortcakes, pancakes, yogurt, or cheesecake). Garnish with fresh mint leaves. Use immediately, or store in an airtight container in the refrigerator for up to 3 days. Stir gently before serving.
