    Prep the meat

    If the prime rib isn't already thinly sliced, partially freeze for 20–30 minutes to firm, then slice as thinly as possible against the grain. Lightly season the slices with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper; toss to coat.

    Cook the meat

    Heat 1 tablespoon vegetable oil in a large heavy skillet or cast-iron pan over high heat until shimmering. Add the sliced prime rib in an even layer (work in batches if necessary to avoid crowding). Sear for about 45–60 seconds per side, flipping only once, until just browned — the meat should be rare to medium-rare. Remove meat to a plate and tent loosely with foil. Repeat with remaining meat, adding a little more oil if needed.

    Caramelize onions

    In the same skillet (wipe out excess burnt bits but keep fond), add 1 tablespoon unsalted butter and 1 tablespoon olive oil over medium-low heat. Add the thinly sliced onion and 1/4 tsp sugar (optional). Cook, stirring occasionally, for 15–20 minutes until the onions are deeply golden and caramelized. Adjust heat to prevent burning; if they dry out, add a splash of water or a teaspoon of oil.

    Cook mushrooms and peppers

    Push the caramelized onions to the side of the skillet and increase heat to medium-high. Add the sliced mushrooms and red bell pepper to the pan. Let mushrooms sit undisturbed 2 minutes to develop color, then stir and cook 4–5 minutes until mushrooms are browned and peppers are tender-crisp. Add 1 teaspoon minced garlic in the last 30 seconds and stir to combine with onions. Season vegetables with a pinch of salt and pepper to taste.

    Combine with meat

    Return the seared prime rib slices to the skillet with the caramelized onions, mushrooms, and peppers. Stir and warm together over medium heat for 1–2 minutes so flavors meld and meat finishes cooking to desired doneness. Taste and adjust seasoning.

Assembly & Serving

    Prepare rolls

    Butter the insides of 2 hoagie rolls with the reserved 1 tablespoon unsalted butter. Heat a clean skillet or griddle over medium heat and toast the rolls butter-side down until golden, about 1–2 minutes.

    Melt cheese

    Divide the meat-vegetable mixture between the two rolls. Top each portion evenly with 2 slices of provolone. To melt the cheese, cover the skillet with a lid (or place sandwiches under a low broiler for 1–2 minutes) until the cheese is melted and bubbling.

    Finish & serve

    Transfer the sandwiches to plates, garnish with chopped parsley if using, and serve immediately. Provide extra salt/pepper or hot sauce at the table.
