Roasted Garlic Aioli

Method

Prepare the Fries

Cut the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips to create fries.

Soak the Potatoes

Place the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes

Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the potatoes and pat them dry. Fry in batches until golden brown and crispy, about 5-7 minutes.

Season the Fries

Remove the fries from the oil and drain on paper towels. While still hot, drizzle with truffle oil and sprinkle with sea salt and grated Grana Padano cheese.

Prepare the Aioli

In a mixing bowl, combine mayonnaise, roasted garlic (mashed), lemon juice, salt, and black pepper. Mix well until smooth and creamy.
