Sweet Potato Fries

Prep and Par-Cook
Preheat oven to 425°F (220°C). Line a baking sheet with parchment and set a wire rack on top if available. Peel (optional) and cut sweet potatoes into consistent 1/4–1/2-inch fries. Place cut fries in a large bowl of cold water and soak 10 minutes to remove surface starch, then drain and pat completely dry with a clean towel.

Toss the dried fries with cornstarch until lightly dusted, then add olive oil, smoked paprika, salt and pepper; mix until evenly coated. Spread fries in a single layer on the prepared sheet (avoid overcrowding). Bake 18–25 minutes, flipping once halfway, until edges are crisp and centers tender. If air fryer is used, cook at 400°F for 12–16 minutes, shaking halfway. Remove from oven and keep warm while finishing burgers.
Dijonnaise

In a small bowl combine mayonnaise, Dijon mustard, apple cider vinegar, honey (if using) and black pepper. Whisk until smooth. Taste and adjust seasoning—add a pinch of salt or more vinegar to brighten. Cover and refrigerate until assembly.
Griddled Onions

Heat a large cast-iron skillet or griddle over medium heat. Add butter and olive oil. When butter is foaming, add the thinly sliced onions and spread into an even layer. Sprinkle with 1/2 tsp salt and the brown sugar (if using). Cook, stirring occasionally, for 12–18 minutes until deeply softened and golden brown — reduce heat slightly if onions start to burn. Remove from pan and keep warm.

Divide the 1 lb ground beef into four loosely packed 4-oz balls (two balls per burger for double-patty smash). Season the tops of the balls lightly with salt and pepper.

Place two meat balls per bun on the hot griddle, leaving ample space between. Immediately press each ball flat with a heavy spatula or burger press to form thin patties (~1/4 inch). Hold pressure 10–15 seconds, then release. Season the exposed patty surfaces with a pinch of salt and pepper.

Cook patties undisturbed for 1.5–2 minutes until edges brown and juices start to appear on the surface. Use the spatula to scrape underneath and flip each patty. Quickly top each patty with a slice of aged white cheddar so it begins to melt. For a cheesier, stacked effect, place two cheddar-topped patties per bun stacked on top of each other after flipping the second set and allow them to meld for 20–30 seconds.

Assemble each burger: spread 1–2 tablespoons of Dijonnaise on the bottom bun, place the double cheddar-topped patties, spoon a generous portion of griddled onions over the meat, add 4 bread-and-butter pickle slices, and finish with the top bun. Serve immediately with sweet potato fries on the side.
