    Prep slices

    Preheat a skillet over medium heat or set a toaster/oven to broil. Lightly brush both sides of the 4 sourdough slices with the 2 tbs olive oil (or spread butter on one side if using for extra richness).

    Toast the slices in the skillet 2–3 minutes per side until golden and crisp, or place on a baking sheet and broil 1–2 minutes per side until edges brown. Remove and keep warm.

Avocado Mash

    Prepare avocado

    Cut the 2 ripe avocados in half, remove pits and scoop flesh into a medium bowl.

    Add 1 tbs fresh lime juice immediately to prevent browning.

    Using a fork, mash the avocados to a slightly chunky texture (leave some small pieces for body).

    Stir in 3 tsp sea salt, 1 tsp freshly ground black pepper, 0.5 tsp red pepper flakes, 2 tbs chopped cilantro (if using), and 2 tsp finely diced shallot or red onion (if using). Taste and adjust seasoning — add more lime or salt to preference.

Assemble & Garnish

    Spread an even layer of the avocado mash across each warm sourdough slice, dividing the mash evenly among the 4 slices.

    Sprinkle a light pinch (about 1 tsp total) of everything bagel seasoning or sesame seeds across the toasts.

    Finish with a small pinch of flaky sea salt (about 0.5 tsp total) and a squeeze of the lemon wedge over each toast to brighten flavors.

    If desired, top with microgreens or baby greens for freshness and texture. Serve immediately while the toast is still warm.
