    Press the tofu

    Remove tofu from packaging and drain. Wrap the block in clean kitchen towels or paper towels and place on a flat tray. Put a heavy weight (cast-iron skillet or cans) on top and press for 20–30 minutes to remove excess water. If short on time, slice into pieces and press with a heavy pan for 10 minutes.

    Slice

    After pressing, unwrap the tofu and pat dry. Slice into 1/2-inch (about 1.25 cm) slabs or 3/4-inch cubes depending on preference. Arrange slices in a single layer in a shallow dish or tray.

    Make the marinade

    In a small bowl whisk together tamari (3 tbs), rice vinegar (1 tbs), sesame oil (1 tsp), neutral oil (1 tbs), maple syrup (1 tsp), grated ginger (1 tsp), minced garlic (1 clove) and freshly ground black pepper (1 tsp). Stir until combined.

    Coat with cornstarch (optional crisping)

    Lightly dust both sides of each tofu piece with cornstarch (1 tbs total distributed). This helps create a crisp exterior when grilled. Dusting is optional but recommended for best texture.

    Marinate

    Place the tofu pieces into the shallow dish and pour the marinade over them, turning to coat evenly. Let sit at room temperature for 15–30 minutes or refrigerate up to 2 hours. If refrigerated, bring back to room temperature for 15 minutes before grilling.

Grilling & Finish

    Preheat grill or grill pan

    Heat an outdoor grill to medium-high (about 400°F / 200°C) or place a heavy grill pan over medium-high heat on the stovetop. Brush the grates or pan lightly with neutral oil (use about 1 tsp) to prevent sticking.

    Grill the tofu

    Place tofu pieces on the hot grill or grill pan in a single layer. Cook without moving for 3–5 minutes until grill marks form and the edges brown. Flip carefully with a spatula and grill the other side 3–5 minutes. During the last 1–2 minutes, brush more marinade over the top to build flavor and glaze. Total grilling time per side may vary with thickness—aim for a golden-brown, slightly crisp exterior.

    Rest

    Transfer grilled tofu to a plate and let rest 2–3 minutes so juices redistribute and any glaze sets.

    Garnish and serve

    Squeeze fresh lime or lemon over the tofu. Sprinkle with toasted sesame seeds and chopped green onions. Taste and add salt to taste if needed. Serve hot as a main with rice/greens or as a protein for bowls and sandwiches.
