    Prepare carrots

    Trim and peel carrots. Cut on a diagonal into 1/2-inch thick pieces (or halve lengthwise and slice into 1/2-inch batons for thicker carrots) so pieces are uniform for even cooking.

    Sear and caramelize

    Heat a large skillet over medium-high heat until hot. Add 2 tbs olive oil and 1 tbs butter. Once butter foams, add carrots in a single layer (work in batches if needed). Let carrots cook without moving for 2–3 minutes to develop color, then toss or stir and cook another 2–3 minutes until edges are golden.

    Finish cooking with glaze

    Reduce heat to medium, sprinkle 1 tbs brown sugar, 1 tsp salt and 1 tsp black pepper evenly over carrots. Add 3 tbs water, cover the pan, and cook 4–6 minutes until carrots are tender but still have a slight bite and glaze has thickened. Uncover and increase heat to medium-high for 1–2 minutes to further caramelize and evaporate excess water. Taste and adjust seasoning.

Whipped Feta

    Blend whipped feta

    Place 6 oz feta, 2 oz cream cheese, 2 tbs Greek yogurt, 1 tsp lemon juice, 1 tsp olive oil and 1/2 tsp black pepper in a food processor or blender. Pulse and scrape down sides, then blend until smooth and airy, about 30–45 seconds. If too thick, add up to 1 tsp water or more yogurt, 1/2 tsp at a time, to reach a spreadable consistency. Taste and adjust lemon or pepper.

Spiced Hot Honey

    Make hot honey

    Combine 1/4 cup honey, 1/2 tsp red pepper flakes, 1/4 tsp smoked paprika, 1/2 tsp apple cider vinegar and 1/8 tsp salt in a small saucepan. Warm over low heat, stirring occasionally, until honey thins and the spices infuse, about 2–3 minutes. Do not boil. Remove from heat and let cool slightly; the flavor will deepen as it rests.

Assemble & Serve

    Spread whipped feta in an even layer or dollops across a serving platter or individual plates, creating a base for the carrots.

    Arrange the warm caramelized carrots over the whipped feta, leaving some white space so the feta shows through.

    Drizzle spiced hot honey over the carrots (use to taste; start with 1–2 tbs). Sprinkle 1 tsp za'atar evenly over the dish, then scatter 1 tbs chopped parsley and 1 tsp lemon zest for brightness.

    Serve warm or at room temperature as a lunch or dinner side or a light vegetarian main. Leftovers: store components separately (carrots, whipped feta, hot honey) in airtight containers in the fridge for up to 3 days; rewarm carrots gently before serving.
