    Prepare oven and pans

    Preheat the oven to 350°F (175°C). Grease and flour two 9x5-inch loaf pans or line with parchment, leaving an overhang for easy removal.

    Mash bananas and combine wet ingredients

    In a large bowl, mash ripe bananas until mostly smooth (about 3 cups). Stir in melted butter, granulated sugar, brown sugar, eggs, buttermilk and vanilla extract until combined.

    Whisk dry ingredients

    In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt and cinnamon.

    Combine wet and dry

    Gently fold the dry ingredients into the wet mixture with a spatula until just combined — do not overmix. Fold in chopped walnuts or pecans if using.

    Fill pans and bake

    Divide batter evenly between prepared loaf pans, smoothing the top. Bake on the center rack for 50–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If tops brown too quickly, tent with foil after 30–40 minutes.

    Cool

    Remove loaves from oven and cool in pans 10–15 minutes. Run a knife around edges, transfer loaves to a wire rack and cool completely before slicing (at least 2 hours for best texture).

Whipped Brown Butter Cream Cheese

    Brown the butter

    In a light-colored, medium saucepan, melt the unsalted butter over medium heat. Swirl frequently; after the butter foams, watch closely as milk solids turn golden-brown and develop a nutty aroma (about 5–7 minutes). Remove from heat immediately and pour into a small bowl to stop cooking. Chill until cool but still liquid (about 15–20 minutes) or refrigerate briefly until lukewarm.

    Beat cream cheese and sugars

    In the bowl of a stand mixer fitted with the paddle (or with a hand mixer), beat the softened cream cheese on medium speed until smooth, about 1–2 minutes. Add powdered sugar, optional light brown sugar, vanilla extract, lemon zest and salt. Beat until combined and smooth.

    Incorporate browned butter

    With the mixer on low, slowly drizzle the cooled browned butter into the cream cheese mixture. Once incorporated, increase speed to medium-high and whip for 1–2 minutes until light and fluffy. Taste and adjust salt or powdered sugar as needed. Chill until ready to serve; the spread will firm slightly in the fridge.

Platter Assembly & Serving

    Slice each cooled banana bread loaf into 12–14 slices (about 1/2-inch thick). Depending on catering size, arrange slices in overlapping rows on a large serving platter.

    Spoon or pipe dollops of the whipped brown butter cream cheese onto the platter alongside the bread slices, or serve in a bowl for guests to spread. Garnish with fresh banana slices and toasted walnut halves scattered across the platter.

    Drizzle lightly with maple syrup or honey just before serving, and tuck mint sprigs among the bread for color. If transporting, keep cream cheese chilled and add drizzle/mint at the venue to prevent sogginess.
