Prepare the Mushrooms
Preheat your wood-fired oven to around 500°F (260°C). Clean the mixed mushrooms with a damp cloth, remove any tough stems, and slice them as needed. In a skillet, heat the olive oil over medium heat, add the mushrooms, and sauté for about 5-7 minutes until they are golden brown. Season with salt, black pepper, and fresh thyme. Set aside.

Prepare the Pizza Base
On a floured surface, stretch out the Bianca pizza dough into a round shape, about 12 inches in diameter. Make sure to create a slightly thicker edge for the crust.

Assemble the Pizza
Place the stretched pizza dough onto a pizza peel or baking tray. Tear the Fior di Latte Mozzarella into small pieces and distribute evenly over the dough. Follow with the sautéed mushrooms and finish with slices of smoked provolone cheese.

Bake the Pizza
Carefully transfer the assembled pizza into the preheated wood-fired oven. Bake for 8-10 minutes or until the crust is golden brown and the cheeses are bubbling.

Serve
Remove the pizza from the oven, let it cool for a minute, and then slice it. Optionally, you can drizzle with a little extra olive oil and sprinkle more fresh thyme before serving.
