Dough Preparation

Mix the Dough
In a large bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until frothy. Add olive oil, salt, and flour gradually, mixing until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour.

Preheat the Oven
Preheat your wood-fired oven to 800°F (425°C).

Assemble the Pizza
Roll out the dough on a floured surface to your desired thickness. Transfer to a pizza peel. Spread the caramelized onions evenly, followed by the crispy bacon. Add the shredded fior di latte mozzarella and dollops of ricotta cheese.

Bake the Pizza
Transfer the assembled pizza to the preheated oven and bake for about 8-10 minutes or until the crust is golden and the cheese is bubbly.

Add the Eggs
Crack the eggs on top of the pizza during the last 2 minutes of baking. Season with salt and pepper.

Once cooked, remove the pizza from the oven, garnish with fresh basil, and serve uncut.
