Lychee Mojito

1. Prepare glass

Place a sturdy highball or Collins glass on the counter. Add the fresh mint leaves to the bottom of the glass.

2. Muddle mint

Add the fresh lime juice and simple syrup to the glass with the mint. Gently muddle the mint with a muddler (or the back of a spoon) 6–8 times to release fragrant oils without shredding the leaves.

3. Add lychee purée

Pour the lychee purée into the glass and stir briefly to combine with the muddled mint, lime, and syrup so the fruit integrates evenly.

4. Build the cocktail

Fill the glass about three-quarters full with crushed ice. Pour in the white rum over the ice.

5. Top and finish

Top the drink with club soda (approx. 2 oz) to your taste. Gently stir once or twice from top to bottom to marry the ingredients while keeping fizz.

6. Garnish and serve

Skewer or drop one canned lychee onto a pick and place it in the glass. Add a lime wheel or wedge on the rim and a mint sprig. Serve with a straw and enjoy.
