Build and mix
Chill a highball or large copa glass by filling it with ice and letting it sit 30 seconds, then discard excess water. Add 2 oz gin, 0.5 oz fresh grapefruit juice, 0.25 oz fresh lime juice and 0.25 tsp simple syrup (if using) into a mixing glass or shaker. Add a large handful of fresh ice and stir briskly 10–15 seconds to chill and lightly dilute.

Final touch
Give the drink one gentle stir (1–2 turns) to integrate the Aperol slightly without flattening the tonic. Taste and, if you prefer slightly sweeter, add up to another 0.25 tsp simple syrup and stir once.
