Funnel Cake Batter & Frying

Make the batter
In a large bowl, whisk together 2.5 cups flour, 2 tbsp granulated sugar, 1 tsp baking powder and 1/2 tsp salt until combined. In a separate bowl, whisk 1.5 cups whole milk, 2 large eggs, 1 tsp vanilla extract and 2 tbsp melted butter. Pour wet ingredients into dry and whisk until smooth and free of lumps. The batter should be pourable but slightly thick; if too thick, add up to 2 tbsp more milk.

Heat oil
Pour about 1.5 cups vegetable oil into a heavy, deep skillet or Dutch oven (oil depth ~1 to 1.5 inches). Heat oil over medium heat to 365°F (185°C). If you don't have a thermometer, test with a small drop of batter— it should sizzle and rise slowly without burning.

Fry funnel cakes
Transfer batter to a squeeze bottle, a large measuring cup with a pouring spout, or a funnel with the tip closed until ready. Working in batches (do not overcrowd), hold the bottle/funnel 4–6 inches above the oil and drizzle batter in a loose spiral or lattice pattern into the hot oil. Fry 1–2 minutes per side, until golden brown and crisp, using tongs or a slotted spatula to flip once. Drain on paper towels and immediately dust generously with powdered sugar. Keep warm on a wire rack in a 200°F (95°C) oven while you finish remaining cakes.

Chocolate sauce (quick ganache)
Place 1 cup semi-sweet chocolate chips in a heatproof bowl. Heat 1/2 cup heavy cream in a small saucepan until just simmering; pour over chocolate and let sit for 1 minute. Stir gently until smooth. Stir in 1 tbsp unsalted butter until glossy. Keep warm or transfer to a small serving bowl; rewarm briefly if it thickens.

Lemon curd dip (lightened)
Combine 3/4 cup store-bought lemon curd with 1/4 cup sour cream in a small bowl and whisk until smooth and slightly fluffy. Taste and adjust—add a teaspoon of sugar if you want sweeter, or a pinch of salt to balance. Chill until serving.

Salted caramel dip
In a medium saucepan over medium heat, melt 1/2 cup granulated sugar, swirling occasionally until it becomes an amber caramel (watch closely to avoid burning). Remove from heat and carefully stir in 3 tbsp butter until melted. Slowly whisk in 1/4 cup heavy cream (mixture will bubble vigorously). Stir until smooth, then add 1/4 tsp salt. Cool slightly and transfer to a serving bowl. If it thickens too much, reheat gently to pourable consistency.
Berry-Crusted Fried Ice Cream

Form and freeze ice cream balls
Scoop the vanilla ice cream into 6 roughly even scoops (about 1/2 cup each). Place scoops on a parchment-lined tray and freeze at least 2–3 hours until very firm (overnight preferred).

Prepare coating
Crush 1 cup freeze-dried mixed berries to a fine crumb in a food processor or by placing in a zip-top bag and crushing with a rolling pin. Combine the crushed berries with 1 cup lightly crushed cornflakes and 1/2 tsp ground cinnamon in a shallow bowl; mix thoroughly so the berry crumbs evenly coat the cereal.

Bread the ice cream
Whisk 2 eggs with 2 tbsp whole milk in a shallow bowl to make an egg wash. Working quickly, remove one frozen ice cream scoop at a time, roll it in the egg wash, then press firmly into the berry-cornflake mixture to fully coat. For extra crunch, re-dip in egg wash and roll again for a double coat. Return coated scoops to the freezer for at least 30 minutes to firm again.

Freeze-safe frying
Heat about 1 inch of vegetable oil in a heavy saucepan to 375°F (190°C). The oil must be hot so the coating browns quickly without melting the ice cream. Fry one or two coated scoops at a time, lowering them carefully with a slotted spoon. Fry 8–12 seconds, turning once, until golden—do not exceed 15 seconds. Remove and drain on paper towels, then immediately return to the freezer if not serving right away.
Assembly & Garnish

To plate, place a warm funnel cake on each plate. Dust with additional powdered sugar if desired. Serve with small ramekins of chocolate ganache, lemon curd dip and salted caramel alongside. Place one berry-crusted fried ice cream ball on the plate beside the funnel cake. Garnish with 1 cup fresh mixed berries, a few mint leaves and an optional drizzle of 2 tbsp honey over the berries or funnel cake. Serve immediately so fried ice cream retains contrast of hot and cold.
