Prepare Watermelon Juice
Blend fresh watermelon until smooth, then strain through a fine mesh sieve to obtain 1 cup of watermelon juice.

Mix the Mimosa
In a large pitcher, combine the watermelon liqueur and fresh watermelon juice. Stir gently.

Add Champagne
Slowly pour in the champagne or sparkling wine into the pitcher. Stir gently to combine without losing bubbles.
