For the Arancini

Method

Instructions

  1. 1

    Prepare the Filling

In a medium saucepan, bring the broth to a boil. Add the Arborio rice and simmer on low heat until the rice is tender and the liquid is absorbed, about 18-20 minutes. Set aside to cool.

  2. 2

    Cook Sausage and Vegetables

In a skillet, heat a drizzle of olive oil over medium heat. Add the onion and garlic, sauté until translucent. Add the sausage, breaking it up with a spoon, and cook until browned. Stir in the chopped broccoli rabe and cook for an additional 3-5 minutes. Season with salt and black pepper. Remove from heat and let cool.

  3. 3

    Combine Filling

In a large bowl, combine the cooked rice, sausage mixture, Parmesan cheese, and beaten egg. Mix well and adjust seasoning if necessary.

  4. 4

    Form the Arancini

Once the mixture is cool enough to handle, take small portions (about 2 tablespoons) and form them into balls. Roll each ball in flour, then dip it in beaten egg, and finally coat it in breadcrumbs. Repeat with remaining mixture.

  5. 5

    Fry the Arancini

In a large pot or deep skillet, heat olive oil to 350°F (175°C). Fry the arancini in batches until golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels.

  6. 6

    Serve

Serve hot, garnished with additional Parmesan cheese if desired.
