Waffles and Compote

Method

Preparation

  1. 1

    Make the Strawberry Compote

In a saucepan over medium heat, combine the sliced strawberries, sugar, and lemon juice. Cook for about 5-7 minutes, stirring occasionally until the strawberries have softened and released their juices. Remove from heat and set aside.

  2. 2

    Prepare the Waffle Batter

In a large bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, mix the milk, eggs, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  3. 3

    Cook the Waffles

Preheat your waffle iron. Pour the batter onto the hot waffle iron and cook according to the manufacturer's instructions until golden brown. Repeat with the remaining batter.

  4. 4

    Whip the Cream

In a medium bowl, using a hand mixer or whisk, whip the heavy cream and vanilla extract until soft peaks form.

  5. 5

    Assemble the Dish

Serve the waffles topped with warm strawberry compote and a dollop of whipped cream.
