    Prepare the Dough

    In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until frothy. Add the flour and salt; mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place it in a greased bowl, cover, and let it rise for about 1 hour or until doubled in size.

    Shape the Pretzels

    Preheat your oven to 450°F (230°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.

    Baking Soda Bath

    In a large pot, bring 10 cups of water to a boil and add baking soda. Boil each pretzel for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.

    Bake

    Sprinkle the boiled pretzels with coarse sea salt. Bake in the preheated oven for 12-15 minutes or until golden brown.

    Remove the pretzels from the oven, let them cool slightly, and serve warm with Dijon mustard.
