Cook the Tagliatelle
In a large pot of boiling salted water, cook the tagliatelle pasta according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

Prepare the Pancetta
In a large skillet, heat olive oil over medium heat. Add the pancetta and cook until crispy, about 4-5 minutes. Add the minced garlic and cook for another minute until fragrant.

Combine Ingredients
Lower the heat and add the cooked tagliatelle to the skillet with the pancetta. Pour in the heavy cream and toss everything together, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.

Add Pistachios and Season
Stir in the chopped pistachios and grated Parmesan cheese. Season with salt and black pepper to taste. Mix well to combine.

Serve
Plate the pasta and garnish with fresh chopped parsley. Serve immediately and enjoy your Pasta alla Brontese!
