Bourbon Production Process

    Mashing

    Combine corn, rye, and barley in a mash tun and add hot water to create a mash. Maintain the temperature for enzymatic activity.

    Fermentation

    Transfer the mash into fermentation tanks and add yeast. Allow fermentation to occur for several days until the sugars are converted into alcohol.

    Distillation

    Distill the fermented mixture in copper pot stills, collecting the distillate known as 'white dog'.

    Aging

    Transfer the white dog into charred oak barrels for aging. Allow the bourbon to age for at least four years, during which it will develop its flavors.

    Bottling

    After aging, filter the bourbon and dilute with filtered water to achieve the desired proof before bottling.
