    Prepare the Apricots

    Preheat your oven to 350°F (175°C). In a small saucepan, combine dried apricots, brown sugar, and a pinch of salt. Add enough water to cover the apricots and simmer for 10 minutes until softened. Drain and set aside.

    Prepare the Brioche

    In a skillet, melt 2 tablespoons of unsalted butter over medium heat. Add brioche slices and toast until golden brown on both sides. Remove from skillet and set aside.

    Make the Cream Mixture

    In a mixing bowl, whisk together heavy cream, whiskey, and ground cinnamon until well combined.

    Assemble the Dish

    In a baking dish, layer the toasted brioche slices on the bottom, then evenly distribute the soaked apricots on top. Pour the cream mixture over the brioche and apricots.

    Bake

    Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbling.

    Remove from the oven and let cool slightly before serving. Drizzle with remaining melted butter if desired.
