Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips, about 1/4 inch thick. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean towel to ensure they are moisture-free.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips to the hot oil in batches. Fry for about 5-7 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Season with Truffle Salt
While the fries are still hot, sprinkle with truffle salt to taste. Toss gently to ensure even seasoning.

If desired, garnish with freshly chopped parsley before serving.
